From what I understand, The Princess and the Frog wasn't even *supposed* to have the first black princess. They decided that it would be cool to set it in New Orleans and then decided "Hey, why not?" And for Rapunzel, they figured "We'll go back and have it be a vaguely European setting, like with the older movies".
So no, I doubt Disney will stop giving us a range of ethnic characters. Actually, I'm kind of hoping that Disney will consider adapting fairy tales from other cultures, like they did with Mulan.
