He doesn't want humans running around with the power to overthrow vampires, nor does he want any other vampires getting the idea to turn them, specifically to overthrow the Volturi. It would also give an actual reason to angst over being vampired - it would be really upsetting, in my opinion, to find out that you were more or less manipulated and forced to give up your humanity just because you had a power and were considered "dangerous" by other vampires.
