Not only that, but I got the feeling that Davy wanted Jack's soul just so he could say "Hey, I beat the infamous Jack Sparrow!" But yeah, Kate has, thus far...held a pistol/sword to someone's throat, and that's it. No signs she's the list bit good at running a ship. So why would he want her?
